Sussex Dry Gin is created using vacuum distillation. Our glass vacuum still operates at a much lower pressure and temperature than a traditional copper still. This gentle approach creates uniquely smooth spirits and preserves complex flavours that can be lost during conventional, high-temperature distillation.
